XXL Pellet Smoker Review

"First, let me say I am not affiliated with Camp Chef in any way. I own many of their other products and have found them to be excellent in quality, performance and value. This is the first pellet smoker of theirs I have purchased. I got this unit from Sportsman's Warehouse. First impression was how well the smoker was packaged from the factory. A mix of styrofoam, hexagonal sandwiched cardboard and plastic cornet pieces protected the cabinet and the interior boxed contents. The outside of the box had minor shipping damage, but the interior components had none. Excellent. After unpackaging everything, reading and familiarizing myself with the instruction manual (yes, it's a good idea to do it first), I laid out all the parts on the garage floor. All the screws and bolts are packaged and labeled in sync with the instruction/assembly manual. No sorting or trying to figure out what gets used first, sizes, and amounts. Huge time saver. There were NO shortages, requiring a trip to the hardware store. Every screw, nut, bolt and washer was accounted for. Assembly instructions suggest using two people due to the weight of the unit, I am mechanically inclined, and assembled this by myself. The most time consuming part of the assembly was putting on the four legs. I utilized the hexagonal cardbooard packing material to elevate the body of the smoker, as the legs are canted outward. A second person would have saved time here. Also, the bottom door panel is attached to the smoker body with screws on the sides and bottom. Removing that panel would have saved time and made it much easier for one person, but I elected to leave it in place, and not remove it. A third hand or another person would have made it much easier. The remainder of the assembly was pretty straight forward. I did install one of the heat deflector brackets backward - my screw up - but it was an easy fix. Comments regarding assembly time seem to be about two hours with two people. From the time of unboxing, laying everything out, assembly to putting the tools away and packing material cleanup was just under two hours with one person. They only tools you will need are two Phillips head screwdrivers, one small and one medium head, a wrench or socket for the nut on the back of the door handle, and two Allen wrenches (supplied by Camp Chef in the hardware packages). A screw gun with magnetic tip may make it easier for one person too, but not necessary. Once assembled, overall fit and finish are very good. The side discharge smoke damper vent has a deflector welded to the inside of the cabinet, unlike that of the propane fired Smoke Vault that I own. I'm assuming this will keep more smoke inside the cabinet, instead of venting it straight out. I will use this to primarily smoke sausage. The propane Smoke Vault cabinet worked fairly well, but was difficult to maintain a low enough temperature for long smokes, even on the warm setting. To get enough smoke also required the use of an A-Maze-N pellet tube smoker. I'll be doing the initial burn/break in later today, and I'm curious as to how well this pellet smoker will flavor the meats, working at a lower temperature. I will update this post after a while to report back. But so far, based upon packing, fit and finish, ease of assembly, and price point, I give it a solid 4 stars."

Very solid performer

I've had this pellet smoker for over 6 months. I've smoked a lot of chicken wings and pork shoulder. I'm quite happy with the construction and function of the smoker. Only limitation is this isn't a grill and isn't capable of generating grill-like temperatures.

It Was Worth The Wait!

Camp Chef really knocked this one out of the park. A good strong construction and the manuel to assemble was very easy to read. This will hold alot of food. I haven't been a fan of P.I.D. controllers until now. P.I.D. controllers are normally so efficient at holding correct temps that they put out very little smoke. Camp chef thought of that and incorporared a smoke level setting that you can adjust according to how much smoke you want. Higher the smoke setting the more radical your temps swings will be. Great smoke output, the temperature swings are very minimal compared to other pellet smokers I have used. Using the smoker for the past few months I have pretty much only used the low smoke and high smoke settings. The low smoke is perfect for jerky staying at Temps between 180 and 150 depending on the weather and how much the vent on the side is open. I find having the vent closed as far as it will go keeps the low smoke at a steady pace. The high smoke has made really good pork loin and pork butts. I even used the smoker to reverse sear some steaks smoking them in the smoker and searing on the grill. The ash cleanout is a big plus as you dont have to vacuum it out after every cook just pull the lever on the side and the ashes fall out. I am very pleased with this smoker and I like it so much I am considering selling my pellet grill and getting my hands on one of those woodwind pellet grills. The trays are of good construction and are easy to clean. The Camp Chef app is awesome as I can go into town and do whatever I need to and the app still shows what temp your smoker or temp probes are at. Overall I am very pleased with the XXL and I believe if you are looking for a vertical the XXL should be your top pick.

The Smokn Beast

This smoker was so easy to use. No bending over to fill the wood chunks and having to keep a watch over it. We like the ability to set temp and smoke level 1-10. The app on your phone makes it so easy to adjust temp and smoke level. Great Smoker! We'll be using for years to come, very happy with our purchase. 5 Stars!!!

Keeps Consistent Temperature!

Great smoker that can hold a lot of meat. Especially love the PID thermometer controller, it's super accurate at keeping the smoker at the right temp within +/- 2-3 degrees Fahrenheit and we all know how important that is. The WiFi feature is nice but the Bluetooth phone interface loses connection and you have to pair with your phone often if you're farther than 25' or so. Not sure if that can be fixed via an app update or not.

If you're not looking for a grill type smoker, this is the way to go especially if you want to smoke several pieces of meat at the same time.

Only con is it's somewhat cumbersome to clean the inside. I had grease building up on the bottom of the smoker and had to scrap it out using a putty knife. The grease tray doesn't seem to catch it all and drip it into the bucket. Not sure if if you can spray the inside with a hose/power washer because there's not really any way to get rid of the water other than through the burner pull out hole where the pull our rod is.

Definitely recommend if you're a seriously into smoking meats.

XXL smoker Wow.

Had my xxl for 3 months and 8 smokes. Most amazing smoker ever. Set it and forget it. Slight learning curve but the more I use it the better the out come. Purchased 2 smoke tubes to get more smoke flavor. Ready to do my first brisket.

Great equipment for first or long time smoker

As a novice smoker I was really worried about final products and a learning curve. After some initial cooks and glowing reviews from friends and family members, that anxious feeling is gone. The connectivity is so nice for someone who has no clue how long is long enough. The temperature stability of the PID is excellent and the smoke adjustment setting is very useful as the wife wants some smoke flavor but not to be smacked in the face by it. I have yet to push the capacity or cold smoke which may be in the cards for this weekend. The wait for the one I truly wanted without settling for another brand was well worth it.

Excellent Customer Service - Excellent Smoker

I ordered the XXL online through outdoor living.com. The Smoker arrived via FEDEX and was damaged in several places - badly bent door, damaged hopper inlet, damage to the powder coating. I called Campchef's customer service, sent them pictures, and they offered me $150 refund if I could fix the damage myself or a complete exchange for a new one. The damage was too severe so I opted for a new one. The new smoker arrived in a few days with no damage. I packed up the old, FEDEX picked it up at no cost to me, and all is well. The. Smoker works great. As a novice, the learning curve is steep but I am getting great results. I love the simple ash clean out, drippings pickup and hopper emptying shoot. The app, temp probes, and accessories - great stuff. We just purchased the blanket for NE winter smoking - really heavy duty. Will try it out this week. I passed on Grill style smokers because they are just too small. Will get a Komodo grill this spring for searing, grilling, etc. For pure smoking, this is the real deal! Thank you Camp Chek.

Smoking Machine!

I bought the XXL about 6 months ago and have used it to cook over 500lbs of meat as I run a BBQ catering operation. From brisket, turkey, and low smoked salmon this smoker has been amazing and greatly exceeded my expectations. Love the amount of cooking space as it rivals any other pellet grill out there. I am hoping the folks at Camp Chef come out with a XXXL because I will be first in line to purchase.

I went from an electric smoker to the Camp Chef pellet smoker. What a difference, so much better. It holds enough pellets to run all night, adds a lot of smoke to any meat, and is huge.

Vertical smoker

I bought this smoker because I was looking for a good vertical smoker, there are many great horizontal smokers out there but not vertical, I was also looking for quality and substantial size, this smoker has it all. Starting from the 4 swivel bearing castor wheels, which make it very easy to maneuver, the easy to fill side hopper, stainless steel drip tray which is easy to clean and pitched to a trough that drains into a bucket,which then is very easy to dump. The fact that you don't have a water tray inside to deal with makes it like the smokers in most all bbq smokehouse's, you don't need the water if you cook it correctly, and with 2 meat probes to check your temperature you will do that, and the fact it's WiFi and you can be in your house watching,controlling the smoker while watching your favorite sports or out of the weather is the added bonus. There's no glass door that you have to clean all the time ,which I think is a gimmick, all in all a GREAT versatile smoker!

What an amazing Birthday Present

My wife ordered this smoker for my upcoming birthday. Knowing I have always wanted a Kpellet smoker for Brisket, Ribs, Trout, etc. Plus a penchant for wanting to make sausages.

So far, I have had it a week and cooked Chicken, Steak, Pork Belly, and Cheese on it.

Everything has come out amazing and darn near perfect, best steak I have ever made.

The only Con is the WiFi controller is week and if I close the garage door, I lose connectivity to it.

I will be adding an extender into my garage, or in the room above it to help out.
